How do you harvest and bottle the honey?
A: All our harvesting and bottling is done by hand. We simply take it from the hives, spin the honey out of the frame, run it through a mesh filter to remove the bits of wax and then put it in the jar. It is not blended, heat treated or processed in any way and we do not add anything to it. It is as pure and raw as you can get.

Q: Do you feed your bees or use any chemicals?
A: We do not feed our bees any sugar water, pollen or any food supplements at all. We never take all of the honey out of the hive so our bees always have enough raw honey to keep them well fed. We always leave them plenty of honey in the hive over winter to ensure they have enough food to get them through to spring.

Our hives are inspected and monitored regularly for pests and disease. We do not use any antibiotics and control and prevent any problems or pests with natural remedies by using, for example, vegetable oil in pest traps instead of harsh man-made pesticides.

Q: Why does my honey crystallise?
A: Crystallization or granulation is a natural process that occurs in honey and is a sign of quality raw honey. It does not indicate spoilage. Honey is one of the only natural food sources in the world that never goes off. Some honeys crystallise quickly, others much slower, depending on the nectar used to make the honey. If your honey does crystallise, just place the jar in warm water or in the sun and it will return to liquid. It will still taste great and the quality will not be affected. Do not put it in the microwave as it will destroy the honey’s raw and natural form.

Some things you can do to slow down crystallisation are storing your honey at room temperature. Crystallisation is sped up at cool temperatures (5-14 degrees C) so don’t store your honey in the fridge. Also tightly seal your honey container to avoid it absorbing atmospheric moisture.
